Coconut Rice

Description

Make this rich, flavorful rice to serve with curries, stir-fries, soups, or stews.

Ingredients

  • 1 cup long-grain white rice, such as basmati
  • 1 cup coconut milk (full-fat)
  • 1 teaspoon sugar
  • 1/2 teaspoon kosher salt
  • 1 cup water

Directions

Rinse rice until water runs clear. Add rice, coconut milk, sugar, salt, and water to a medium saucepan over medium heat and bring to a boil. Reduce heat to low, stir rice mixture well (scraping bottom of pot), and cover pot. Simmer rice 15 minutes, then turn off heat and let sit 10 minutes. Fluff rice with a fork and serve.
