Ingredients

  1. 1 1/2 pounds haddock fillets, fresh or frozen and defrosted, or cod
  2. 1 cup chicken broth
  3. 1/2 teaspoon salt
  4. 1 dash freshly ground black pepper
  5. 1/4 teaspoon sweet paprika
  6. 1 1/2 cups potatoes, peeled and diced into about 1/2-inch cubes
  7. 3/4 cup diced carrots, from 2 to 3 medium carrots
  8. 1 small onion, finely chopped
  9. 2 tablespoons butter
  10. 2 tablespoons all-purpose flour
  11. 2 cups milk
  12. Chopped fresh parsley, or chives, for garnish

Directions

  1. Gather the ingredients.
  2. Cut fish fillets into small pieces; set aside.
  3. In a large saucepan or Dutch oven, combine the chicken broth, salt, black pepper, sweet paprika, potatoes, and carrots. Cook, covered, for about 8 minutes until vegetables are tender.
  4. Add the fish and cook for another 8 minutes.
  5. Meanwhile, sauté onion in butter until tender in a medium saucepan.
  6. Stir in flour until well-blended.
  7. Then gradually add milk, whisking constantly.
  8. Continue whisking and cooking until thickened.
  9. Add the thickened milk mixture to the cooked vegetables and fish; continue cooking for about 5 to 10 minutes, stirring frequently.
  10. Garnish the fish chowder with fresh chopped parsley or chives.
  11. Serve and enjoy.
