Easy Cheddar Cheese Sauce

Ingredients
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon fine salt
- 1/4 teaspoon dry mustard
- 1/8 teaspoon ground black pepper (or white pepper)
- 1 1/2 cups milk (or light cream)
- 1 cup (4 ounces) grated cheddar cheese (mild or sharp)
Directions
- Gather ingredients.
- Melt the butter in a saucepan over medium-low heat; remove from heat. Stir in the flour, salt, dry mustard, and pepper.
- Put the saucepan back on the heat and cook, stirring, for 1 minute.
- Gradually add milk or light cream, stirring until well mixed.
- Continue cooking, stirring constantly, until thickened and smooth. Reduce the heat to low and simmer, stirring frequently, for 5 minutes.
- Add the cheese and cook, stirring, until the cheese has melted and the sauce is smooth and well blended.
- Taste and season with more salt and pepper if needed. Serve immediately.
